Theory has it that because shortening, unlike oil, is solid at room temperature, once the fried item has cooled, it “seeps” less oil into the stuff around it (think telltale greasy napkins and paper plates) and generally tastes less greasy on the tongue. Some people keep it and you can definitely can — I am not an expert on this but mostly you’ll want to strain it and store it in a jar in a cool place — but I tend not to deep-fry more than a couple times a year and don’t find the extra oil stays good that long.
